There is a very specific moment in Southeast Texas when the air changes. It usually happens right around now, in early March, when that heavy, wet winter chill finally decides to pack its bags and head north. Suddenly, the thermometer is nudging past 80 degrees, the humidity is just high enough to make the jasmine smell sweet but not so high that you feel like you’re breathing through a warm washcloth, and the sun feels like an old friend you haven't seen in months.

Technically, the calendar tells us that the first day of spring isn't until March 20th. But if you’ve lived in The Woodlands or Montgomery County for more than a week, you know that the calendar is more of a suggestion than a rule. When the mercury hits 82 on a Tuesday afternoon, spring hasn't just arrived: it’s moved in and started decorating.
